Snow Crab - Seiko Gani Koramori, Wild, Cooked (Japan)

Seiko-gani is a female snow crab with roe. Don't be fooled by the small size of these crabs as each one is densely packed with umami!

These crabs are a special gift from the winter sea as female crab fishing is only permitted for a short window in order to preserve and protect the area's crab resources. Freshly caught female crabs can only be eaten for a short two month period each year (Nov-Dec).
