Freshly cracked uni goes through the cleaning process only to be returned to salt water (Ensui). This salt water has the same salt content as the ocean, which helps retain the natural taste of the uni. The sweetness of the uni will melt in your mouth as if you were to crack the urchin by the shore and eat it fresh.
When ready to eat, strain the water using a strainer and handle with care. Once the salt water is strained off, (about a couple of minutes) the uni is ready to eat! *Rinsing with tap water is not recommended.
