Tsar Nicoulai Smoked Sturgeon is sustainably raised for a minimum of 8 years, under California sunshine and in pure waters while consuming only natural, high quality feed. This process results in healthy fish that are full of nutrients.
When ready, the sturgeon is cured and triple smoked for 8-10 hours in small batches using the simplest ingredients. Brown sugar, sea salt, and Applewood from a neighbor’s farm. This artisanal method produces a deliciously firm and smokey fish.
