Opah, also known as Moonfish, is one of the most versatile fish with a beautiful pink-rose flesh. This fish is the only known warm-blooded fish as it is able to circulate heated blood all over it's body.
It is firm and fatty in texture yet mild in flavor, and suitable for any method of cooking. You can serve it raw as poke or sashimi, but it is also delicious when grilled, pan-seared, baked, or stir-fried.
