Madai, otherwise known as "Red Sea Bream" is very popular for nigiri, sushi, and any Japanese cuisine. It has a firm yet flaky flesh that exhibits a mild flavor. Madai is easily distinguished by its beautiful, coppery-red color.
Established in 1958, Yamaharu is a long-established fish dealer inside the Tsukiji and Toyosu fish markets in Tokyo, Japan. Their fish is flown direct from the market to SFO and our docks.
